Bean chili sauce (豆瓣醬) *see NOTE.1
Cooking rice wine (米酒)
Black bean (豆鼓) *see NOTE.2
Chopped garlic, green onions, sliced ginger
(1) Clean fish. Cut 3 slits on each side.
(2) Heat up oil in pan. Add the garlic + green onion + sliced ginger and sautee 1 min, then add in the fish and cook both sides until slightly brown (probably 2 min each side).
(3) Add about 1-2 tbp of bean chili sauce and coat the fish well. Sautee for another 1 min. Add rice wine, soy sauce, rock sugar (I'm pretty liberal with the amounts, probably 1/2 cup rice wine, 1/2 cup soy sauce, and 5-6 rock sugar; you can always adjust later). Add enough water so that the total liquid in the pan is to about half of the fish's thickness. Cover and simmer on medium heat. Turn the fish every 5 min. Cook for about 20 min until the fish is cooked through.
(4) Uncover. Put 2 tbp (or more) of black bean on the fish. Cook on low heat for another 5-10 min and serve.
This is what the bean chili sauce should look like. It should be RED.
This is what the black bean should look like. It should be black beans in some kind of liquid. You don't really use the liquid. You use the beans which are fermented and salty.
(whole fish) Chinese-style ginger steamed whole fish
Ingredients: 4-5 ginger slices, 2 green onions chopped, some chopped Thai chili peppers (frozen or fresh), sesame oil, rice cooking wine
Steps: Clean fish. Cut 3 slits on each side of the fish. Put 2 slices in the cavity and two on top; pour 1-2 tbp of rice wine. Steam fish in steamer for 10 min (which should make it fully done). When it's almost done, heat up 1:1 portion of sesame oil + vegetable oil in pan, add in chopped green onions + chili peppers, use the heat of the oil to bring out the fragrance, then pour it on top of the fish before serving.

Follow this recipe which does an easy quick pan fry of a whole fish.
[seasoning] 2 tsp lime juice + 1 chopped green onion + 1 clove minced garlic + 1/2 tsp black pepper + pinch of salt
Steps: Clean fish. Cut 3 slits on each side of the fish. Rub seasoning on both sides and cavity and let it sit for 15 min. Then coat the fish with flour and fry it in pan.

Follow this cajun-style blackened recipe with this only modification: CUT CAYENNE PEPPER in half! It was way too hot.
[spice mix] 2 tbp paprika + 1 tbp cayenne pepper + 1 tbp onion powder + 2 tsp salt + 1/2 tsp black pepper + 1/2 tsp white pepper + 1/2 tsp dried thyme + 1/2 tsp dried basil + 1/2 tsp dried oregano
Steps: Rub the spice mix on one side of the fillet. Melt butter in pan, do skin side first then flip until both sides are cooked.
